I scream, You scream.....

We all scream for Ice Cream!
 
 
Do you love a BIG bowl of ice cream?
 
How about cookies?  Do you love those also?
 
Do you dip your cookies in your bowl of ice cream like I do, or do you take a
bite of cookie and then a bite of ice cream?
 
COOKIES + ICE CREAM = YUM, YUM
 
Am I making you crave a BIG bowl of ice cream with cookies yet?
 
How about making some Quick and Easy Cookie Ice Cream Sandwiches?
 
 
I made 12 of these in about 15 minutes.
 
Like I said....Quick and Easy.
 
COOKIES & ICE CREAM SANDWICHES
 
1 package Soft Gourmet Cookies.  (I buy mine at Costco. I used Chocolate Chunk)
1/2 gallon of your favorite ice cream (I used Vanilla Bean)
Add-Ins (snickers, M&Ms, nuts, raspberries and strawberries are just a few)
 
First chop up your add-ins and set aside.
 
 
 
Set out your ice cream for a few minutes to soften.....just long enough to
stir with a spatula.  You don't want it to get too running.
 
Lay out a layer of cookies, bottom side up, on a baking sheet lined with parchment paper.
 
Mix the add-ins and softened ice cream together.
 
 
Add a BIG dollop of the ice cream mixture on each cookie.
 


Top the ice cream with another cookie.  Using gentle, even pressure, squeeze the cookies
together until the ice cream reaches the outer edge of the cookie.
 

 
Place the ice cream sandwiches in the freezer and freezer until the ice cream hardens.
About 2 hours.
 
See I told you it was quick and easy!
 
I also made some with vanilla bean ice cream and raspberries.
 
 
 

Place your raspberries on a baking sheet with parchment paper
and freezer before mixing with the ice cream.  This way your
raspberries will stay firm and mix better.
 
 

 
After a few hours of set time..........
 
Remove from the freezer and take a BIG bite and say......
 
"OH MY SWEET SUMMER GOODNESS!"
 
These ice cream sandwiches are SO MUCH BIGGER and BETTER than
boxed store bought brands.
 
WARNING:  These are ADDICTIVE!  You won't want any others.  GUARANTEED!
 
So buy your favorite cookies and ice cream and get creative.
